This is the method of preparing food locals use when they want to treat themselves. Dating back to ancient times, čripnja/peka is a baking bell made for cooking on open fire. Čripnja, Istrian variant, is made of clay, whereas peka, found in Dalmatia, is made from cast iron. Food prepared in them turns out neither cooked nor baked, but somewhere in between, crispy on the outside, yet tender on the inside. Veal, lamb or octopus usually find their place in a čripnja/peka, always paired with potatoes and vegetables that soak up the juices.

Apart from preparing peka, we always start by preparing an additional dish while we wait for it to be ready. Usually it is pasta, but we can always agree on something else, depending on your preferences and what’s available on the green market.

NOTE: In case of bad weather preventing us setting open fire, we prepare this dish in oven. Moreover, we don’t recommend this class on hot summer days (June – August).
