“We grated fresh truffles and threw them in a pan on hot butter. After a couple of minutes, we added a bit water from cooking the pasta, salt and pepper, stirred in the pasta, and the dish was done. We never had an opportunity to taste one of the most famous Istrian dishes prepared in this way – and for the first time we were sure it was made with fresh truffles only, with no additives.”
